METHOD TO ENGAGE THE SENSES
Assemble your ingredients on a chopping board and choose your favourite sharp knife. Engage all your senses and immerse yourself in the moment as you:
- Crush the leaf between your fingers
– breathe in the freshness
– feel the residue of citrus oil on your fingers - Allow the delicate white flower to fall apart in your hand
– observe the petals and the stamen
– become aware of the faint tang of citrus lingering in your nostrils - Slice the fruit
– as the juice squirts from the cells, savour the acidity
– marvel at the radial symmetry in the slices - Plop a slice into a glass of icy cold water
– tune into the ice cubes tinkling against the glass - Quench your thirst
